After sampling two delicious recipes from the HelloFresh Family Box last week, we have four more family meals to try out this week. Since being introduced to the HelloFresh concept we have been really enjoying the tasty family meals which have transformed mealtimes into a family fun occasion. The reason I say that is because the girls have been so keen to help prepare and cook the recipes and to their amazement they have both really enjoyed the whole process! Anything that brings us together is a winner in my eyes, and as I have found if kids help to cook the meal with you they are more likely to eat it – even if it does have a few ingredients they wouldn’t usually eat. Last week we made Mexican Beef Roly Polys which the girls loved and Spiced Chicken With Coconut Rice – a recipe the girls were a little worried would be too spicy for them but was very mild and tasty.
When we were ready and waiting for our delivery of HelloFresh what I found really useful was getting a text prior to let me know an hour’s window when it would be delivered. Also if I was unable to take the delivery at that time the text had a link where I could change the time displayed, which is so handy. So a top tip if you are registering with HelloFresh to get your own delivery is to remember to add a mobile number as it makes it so useful to know to the hour when your delivery will arrive.

Oven Baked Greek Meatballs With Orzo & Veggies
It’s been a while since I made meatballs from scratch and I generally make them with pork or beef so I was keen to try this recipe to see if this could become a new family favourite. From the girls point of view the best part of the preparation was definitely mixing in the lamb mince with the breadcrumbs, mint, onion and garlic. Siobhan, our teen is really sensory (she has ASD) and as a reluctant home chef I am always thinking of ways to pique her interest in any form of cooking, making the meatballs was by far her favourite cooking experience for a long time which was lovely as it was so good to see her enjoying some home cooking.
The girls took it in turns to read the clear instructions and follow the steps, how useful to have a series of photos for guidance on the recipe cards too. You can see our finished recipe in the photos and while it’s not exactly the same as the photo on the recipe card – it’s pretty close. The proof was in the eating and it’s a really tasty family recipe we all loved the different tastes and adding fresh herbs makes all the difference. It was great to hear the girls saying they both enjoyed the new recipe and it was only the second time I had cooked with orzo which turned out to be a huge hit with us all. We found the Greek Meatball recipe easy to make, took about 40 minutes from start to finish, was more than enough for a family of four (we had lots of leftovers!) and is great to make together. With ten key ingredients in this Greek inspired recipe and 2.5 of your 5 a day we found it tasty as well as easy to make, certainly a recipe we will revisit and add to our favourites.
