Apple & Blackberry Cupcakes

We had a lovely day picking blackberry’s recently and I wanted to make am Autumnal recipe with them which I could make with my daughters. We opted for cupcakes as they love them and also they can fit them into their lunch-boxes for a lunch time treat they have made themselves.  This recipe is so easy to put together and it was lovely to be able to make them with my girls, to show them how fun and easy (and fast) making an afternoon treat can be. It was good to use fruit we had foraged for ourselves too, that was half the fun really and we ended off the day with a cup of tea and a home made cupcake, a great end to a Sunday I think.


  • 250 g plain flour
  • 3 teaspoons baking powder
  • 80 g caster sugar
  • 70 g butter
  • 220 ml / 8 fl oz semi-skimmed milk
  • 1 large cooking apple, peeled, cored and diced
  • 100 g blackberry’s


  • Preheat the oven to 200 C / gas mark 6 and line a cupcake tray with cupcake liners.
  • Sieve the flour and baking powder together and set aside.
  • Cream the butter and sugar until pale, light and fluffy.
  • Gradually add the flour and milk alternately into the sugar and butter mixture until thoroughly combined.
  • Gently fold in the diced apple and the blackberry’s to the mixture.
  • Add to the cupcake cases and bake for 20 -25 minutes or until golden brown.
  • Turn out onto a wire rack to cool and decorate with fresh blackberry’s and a dusting of icing sugar.
